There are three things I will NEVER compromise MY FAITH, MY FAMILY and MY <3 for MEXICAN FOOD. Now that we’ve established some ground rules, let’s dive in, shall we?

Did I ever tell you how much Mexican food is my absolute favorite? I love it! I love it for its fresh, gorgeous colors and flavorsome ingredients, especially tacos. Tacos and I have an old love affair.

I remember when my Mom would cook tacos every Tuesday as a family ritual or something.  She would toast our corn tortilla shells in the oven until they reached the perfect crispiness, filling each shell with hot ground beef coated with homemade taco seasoning.

Taking her time layering each shell: ground beef, cheese, lettuce, and tomatoes with a dollop of sour cream love. I would eat 2-3 tacos with ease well…I…ok, ok maybe 4! Haaaa! I was a growing girl 5’9, 140 pounds I needed some meat on those bones. 🙂

Those were the days of Taco Tuesday how I miss thee. *eyes closed with a huge grin on my face*

Back to these spicy shrimp tacos with blueberry pineapple salsa, I get hungry just saying it.

I decided to go with two salsas. Why? Because I can.  And because of Imma salsa senorita like that! 🙂

Salsa # 1, cilantro corn salsa. This sunny love is made with fresh bursts of corn, cilantro, and zesty bites of jalapenos creating a need to be transported on a deserted island just you and the salsa Livin’ La Vida Loca!

I tell you what. Imma just stand over here > and give you a moment alone with this JUMBO, juicy, spiced-up shrimp.

These shrimp are CRAZY divine!

This my friends. Is. THE. Holy Grail ingredient.

Spicy coated shrimp in an earthy blend of spices such as cumin, smoked-out paprika, chili powder, cayenne pepper riding shotgun with coriander all sauteed in delicious GHEE butter.

Yes, Ghee butter! Look it up. Changed. My. Life.

Next up:

salsa # 2  with blueberries and pineapple all marinated in lime juice, beautified with cilantro, a pinch of salt for that tangy-sweet-salty taste.

How To Prepare Spicy Shrimp Tacos with Blueberry Pineapple Salsa

SPICY SHRIMP TACOS WITH BLUEBERRY PINEAPPLE SALSA

Serves: serves 4-6 tacos
Ingredients
  • Spicy Shrimp Tacos
  • 4 teaspoons organic GHEE butter (olive oil will do)
  • 2 ears of fresh corn on the cob
  • ¼ cup white onions
  • 2 tablespoons of chopped cilantro
  • ½ medium jalapeno pepper, finely chopped
  • 1 tablespoon fresh lime juice
  • ⅛ teaspoon salt
  • 1 pound peeled and deveined large shrimp
  • 1 teaspoon ground cumin
  • 1 teaspoon coriander
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • ¼ teaspoon cayenne pepper
  • 6 flour tortillas
  • Blueberry Pineapple Salsa:
  • ½ cup of freshly chopped pineapple
  • ½ cup of blueberries
  • 3 tablespoons of lime juice
  • 1 tablespoon fresh cilantro
  • 1 jalapeno- stemmed, seeded, and chopped
  • ¼ teaspoon salt
Instructions
  1. Let's get started-Spicy Shrimp Tacos:
  2. Heat 1 teaspoon of Ghee butter in a large skillet over medium-high heat. Add corn and cook for roughly 2 minutes until corn starts to brown.
  3. Transfer corn mixture to a bowl, then mix in onion, cilantro, jalapeno, lime juice, and ⅛ teaspoon salt. Set aside.
  4. Now, for the catch of the day!
  5. Combine shrimp, cumin, coriander, smoked paprika, chili powder, and cayenne pepper. Mix coating shrimp.
  6. Heat remaining oil over medium heat. Add shrimp and cook for 1½- 2 minutes on each side until done and cooked through. (If you don't have a large skillet split shrimp into batches)
  7. Transfer to plate and keep warm on stove warmer.
  8. Heat tortillas as per package.
  9. Salsa time!
  10. In a bowl whisk together ½ cup of blueberries, ½ cup fresh pineapples sliced into chunks, 2 tablespoons lime juice, 1 tablespoon freshly chopped cilantro, 1 jalapeno-stemmed, seeded and chopped, and ¼ teaspoon salt. Mix, then top those tacos!
  11. Plate with 2 tacos per plate, top shrimp with blueberry pineapple salsa. Serve immediately! Enjoy! 🙂
Notes
Spoon salsa juice over tacos-Do does not oversaturate otherwise, your tacos will be soggy and who eats a soggy taco? NOT ME! By the way, feel free to add sour cream.
