NACHOS WITH BLUE CORN TORTILLA CHIPS

Ingredients
  • 4-5 cups blue corn tortilla chips
  • 1 lb. ground beef
  • 1 15.5 oz can of organic black beans
  • 1½ cups of chunky salsa
  • 1½ cups of shredded cheddar cheese
  • 1 tablespoon of butter
  • 1 cup of milk
  • 2 tablespoons of flour
  • 1 diced avocado
  • 2 lime wedges for garnish (squeeze lime juice over nachos Yummy!)
  • 1 cup of diced pineapple
  • 2 sliced jalapeno chile peppers
  • 2 thinly sliced green onions
  • fresh cilantro for garnishing
  • ½- cup of sour cream for topping
Instructions
  1. Preheat oven to 350 F.
  2. Place tortilla chips on a 10-12 inch baking sheet. Set aside.
  3. In a skillet cook ground beef over medium heat until brown. Drain off oil/fat.
  4. Stir black beans and salsa in beef mixture.
  5. Bake tortillas for 5-10 until crispy.
  6. Spoon half of beef mixture over chips.
  7. Pour half of cheese sauce over beef mixture.
  8. Top with toppings
  9. repeat the process.
  10. Top with sour cream
Notes
Cheese sauce:
Melt butter in a saucepan over medium heat, once butter is melted sprinkle flour over butter and cook. Pour in milk while stirring the mixture. (Add salt to taste) Bring to boil, and then reduce heat. slowly add cheese cook until melted and smooth.
