Meet the ginger beer popsicle:

– It’s 6 inches in length (size doesn’t matter)

– Golden on the outside

– Icy cold

– Hard

– Has a nibbly, sweet candy center

And will drip all over you if left un-licked.

Ginger Beer Popsicles

That’s right, I made popsicles today with ginger beer, and they’re DELICIOUS!  I made a batch earlier this week, and I’ve come to learn some things are just better when done the second time around.

It’s like drinking a glass of ice-cold ginger beer in popsicle form.

I made these to cool down on this hot -sizzling sunny day and a special treat for the kiddos who have an uncanny ability to weather this heat.  So I had to up the ante and by doing so,  I added crystallized ginger chips in the center for candy in the middle feel adding texture while enhancing the gingery flavor profile and can I say these ginger pops are all the rave with a sweetened finish.

All you need to create these dreamy pops is a blender, mesh strainer, popsicle mold, and a few simple ingredients and by simple ingredients I mean ginger root, whole cloves, and crystallized ginger chips.

This pop-it-in-the-freezer treat is so easy to whip up, and a MUST do before the summer ends. Whaaaaat?! summer is coming to an end!  I can’t…I can’t even deal right now.

How To Prepare Ginger Beer Popiscles

GINGER BEER POPSICLES

Serves: 10 popsicles
Ingredients
  • 1 whole ginger root (preferably large)
  • 1½ cups sugar
  • 5 cups of cold water
  • 2 tablespoons whole cloves
  • 10-20 crystallized ginger chips
  • 10 wooden popsicle sticks
Instructions
  1. Soak wooden sticks in water for 15-20 to prevent sticks from floating to the top. Set aside.
  2. Peel ginger root, place in a blender then pour in water
  3. Blend at high speed for 15-20 seconds until ginger is finely ground.
  4. Place a fine-mesh strainer over the bowl to collect ginger strands, pressing on ginger strands to extract the juice.
  5. Pour ginger beer into a pitcher, stir in sugar and whole cloves.
  6. Chill ginger beer for 30 minutes; allowing cloves to merry with ginger beer (this is when the magic happens)
  7. Restrain to remove cloves
  8. Add 1-2 crystallized ginger chips to each popsicle mold
  9. Pour ginger beer into popsicle molds, insert popsicle sticks and freeze until solid.
Notes
- For a stronger gingery taste add more ginger.
