GINGER BEER POPSICLES

Serves: 10 popsicles
- 1 whole ginger root (preferably large)
- 1½ cups sugar
- 5 cups of cold water
- 2 tablespoons whole cloves
- 10-20 crystallized ginger chips
- 10 wooden popsicle sticks
- Soak wooden sticks in water for 15-20 to prevent sticks from floating to the top. Set aside.
- Peel ginger root, place in a blender then pour in water
- Blend at high speed for 15-20 seconds until ginger is finely ground.
- Place a fine-mesh strainer over the bowl to collect ginger strands, pressing on ginger strands to extract the juice.
- Pour ginger beer into a pitcher, stir in sugar and whole cloves.
- Chill ginger beer for 30 minutes; allowing cloves to merry with ginger beer (this is when the magic happens)
- Restrain to remove cloves
- Add 1-2 crystallized ginger chips to each popsicle mold
- Pour ginger beer into popsicle molds, insert popsicle sticks and freeze until solid.
- For a stronger gingery taste add more ginger.
