GINGER BEER POPSICLES

Ingredients
  • 1 whole ginger root (preferably large)
  • 1½ cups sugar
  • 5 cups of cold water
  • 2 tablespoons whole cloves
  • 10-20 crystallized ginger chips
  • 10 wooden popsicle sticks
Instructions
  1. Soak wooden sticks in water for 15-20 to prevent sticks from floating to the top. Set aside.
  2. Peel ginger root, place in a blender then pour in water
  3. Blend at high speed for 15-20 seconds until ginger is finely ground.
  4. Place a fine-mesh strainer over the bowl to collect ginger strands, pressing on ginger strands to extract the juice.
  5. Pour ginger beer into a pitcher, stir in sugar and whole cloves.
  6. Chill ginger beer for 30 minutes; allowing cloves to merry with ginger beer (this is when the magic happens)
  7. Restrain to remove cloves
  8. Add 1-2 crystallized ginger chips to each popsicle mold
  9. Pour ginger beer into popsicle molds, insert popsicle sticks and freeze until solid.
Notes
- For a stronger gingery taste add more ginger.
