    SPRING CHICKPEA SOUP

Chickpea soup with chunks of chayote squash, this is that blog post. This is what I came up with last week when our temperatures dropped in the low 50’s.  It satisfied the basic criteria to get folks fed; it was the perfect weeknight option, I made it with very little effort while using healthy ingredients.  Let’s do it. The Ingredients:  Chayote squash Portobello mushrooms Green bell pepper Onions Garlic cloves Roma tomatoes Chickpeas Here’s where the magic begins. Lightly coat the slow cooker with grape seed oil, oh yes, I sure did break out the slow cooker. Stir-fry: chayote squash, mushrooms, bell pepper, onions, garlic in a skillet over medium…

    HEALTHY CHIPOTLE CHICKPEA SALAD

Breaking: Chipotle Chickpea salad coming in spicy! It’s time to add a little spice in your life my friend, and you and I both know you need it. Because according to the calendar, summer is coming to an end; The 4th of July happened, the Olympics came and went, and Labor day is less than two weeks away. As much as I hate to admit it, for all practical purposes, summer is over; you need all the heat you can get before the cold and crisp temperatures begin. Can you imagine your body being fueled on mighty chickpeas that are nutrient dense with iron all covered in a spicy, creamy chipotle sauce with sweet…

LET’S MAKE SOME PASTA MARINARA, CHEF AHKI STYLE

Happy Monday! We have entered the part of the school year where it’s appropriate for my kiddos to scream at the top of their lungs-SCHOOL’S OUT. Do you remember that song “School’s out for Summer?!”, yeah, like that. Friday was our last day of homeschool. YAAAAAAAAAAAAASSSSSSSSSSSSSS!!!!!  As you can see, I’m a little excited too. I can finally exhale, let my hair down and perhaps have more time for my blog (stay tuned). In other news, a few weeks ago my son convinced me that Snapchat is where it’s at on social media, then the stars aligned and… I’M ON SNAPCHAT. Yes, I’m on Snappie! I love this app and its…

HOW TO MAKE CASHEW CHEESE, BECAUSE IT’S SOUL SATISFYING

And I’m addicted.  Intervention at some point should be considered for this obsessed vegan, raw food-loving, coconut water drinking, living fruits eating, sunbathing, cashew cheese spreading Sistah. Yep, intervention is imminent. I’ve made this cashew cheese spread more times than I care to admit publicly. It’s one of my favorite nut cheeses to date. It’s simple easy made with cashews (obviously), spring water, lemon juice, parsley, and salt/pepper. This is how this is gonna down, and trust me it’ll be quick. Question. Have you heard of nut cheese? Well if you haven’t, you’ll learn today it’s a must-have in your repertoire. Nut cheeses are popular in the vegan and raw…

BROCCOLI STIR FRY WITH KELP NOODLES

A few weeks ago, my mouth experienced personal growth with this delicious broccoli stir fry made with kelp noodles. There are a lot of noodles you can use to make stir-fries, but I am here to tell you that there is nothing more satisfying and healthier than using kelp noodles. CHECK THE STATS: Kelp is a sea vegetable with a rich content of trace minerals that includes iodine. Kelp noodles are gluten-free, fat-free, low in carbohydrates and calories. Still not convinced? Kelp screams fishy taste, right? Wrong. Believe it or not, the taste is neutral, so it takes on the flavor profile of the recipe. In this case, the garlic…

PEAR AND PURPLE POTATO SALAD WITH MUSTARD SEEDS

Before we go all greedy on this pear and purple potato salad, let’s catch up, shall we?! Happy New Year! Happy Martin Luther King, Jr. Day! Yes, it’s been a while my friends, but first things must come first.  I hope your New Year has been amazing thus far, you haven’t ditched your resolutions, have you? I’ve learned over the years, that the New Year should be about finishing what you’ve started rather than, starting something new, it’s much easier, and it’s guilt-free in my humble opinion. So, a lot has happened in my life since I last posted. Well, let’s see, I transitioned into a Vegan lifestyle.  Yep, I…

HOMEMADE POMEGRANATE SCONES WITH POMEGRANATE GLAZE

I’m living under cold, dark, gloomy, gray skies, my friends. Literally! I woke up to a rainy morning on Sunday, and it’s been raining ever since.  I went outside on Monday and nearly froze my face off. The winds bullied me back indoors with what felt like a roundhouse kick to the face.  {FYI: I’ve never been roundhouse kicked in the face.} I’m still recovering from a relaxing weekend that included listening to  Adele’s ’25’ cd on repeat and devouring these big, soft, and crumbly pomegranate scones with an unforgettable scent of butter, drizzled with pink PM glaze that’s delicious, sweet, and undoubtedly the best scone I’ve made. It’s been…
