CHIA SEED PUDDING WITH BAOBAB MAPLE SYRUP

Friends, we’re hours days away from 2020 it’s time to level up and try something new because …that’s what we do around here, right?! Riiiiiight.

Let’s acquaint ourselves with the tiny chia seeds that are packed with nutrients and carry a powerful punch.  They’re loaded with antioxidants, HIGH in fiber, Omega 3 Fatty acids and when soaked in liquid, creates the perfect gelatinous pudding consistency.

Pudding as many of us know it growing up was made from a box of JELL-O cooked on the stovetop, with steadily whisking involved to prevent the mixture from burning, and chilled in the fridge.  As we would later learn, it wasn’t made with the healthiest ingredients, but certainly the most memorable.  I can still recall my Mom preparing vanilla pudding with vanilla wafers as though it were yesterday.  Nowadays, we can make pudding from avocados imagine that. Alright, let’s get into making some chia seed pudding because it is luxuriously creamy, and the perfect grownup dessert option.

Your grocery list is super-simple:

  • Chia seeds
  • Coconut milk
  • So Delicious vanilla yogurt
  • Earth Balance butter
  • Baobab powder
  • Nutmeg
  • Maple syrup

Baobab powder, what’s that?

Although chia seeds are the main ingredient, Baobab is the holy grail ingredient with the BOP in it.  In the near future, I’ll share my frequently used products list where I’ll detail the health benefits of consuming baobab powder, but what I will say for now is: it’s loaded with Vitamin C and an excellent support to the immune system.

To make the pudding:

Combine together the chia seeds, coconut milk, and yogurt into a medium-size glass container with a lid.  Place in the fridge for 3 to 5 hours or you can do what I did, and rest it overnight.  When done the consistency should be thick, gelatinous and pudding-like.

To make the Syrup:

Melt the butter in a small saucepan.  Stir in the baobab powder you can substitute with (cinnamon), but to achieve an optimal experience order your baobab from AMAZON, add nutmeg and stir.  Pour in the maple syrup and blend.

You’re done! From this point, I recommend that you give in to the urge and add a heaping dollop of cool delicious pudding into a parfait glass, then layer in the maple syrup it will naturally spread throughout the glass.  Before you consume your alchemical creation, marvel at its beauty then grab a spoon and brace yourself for an oral aftershock with each creamy mouthful your palate will be pleased with the chia seed texture and the sweet baobab maple infusion as they marry in your mouth.

How to prepare chia seed pudding with Baobab maple syrup:

Ingredients
  • For the pudding
  • ⅓ cup chia seeds
  • 1 can of coconut milk
  • ⅞ cup of So Delicious vanilla yogurt
  • For the syrup
  • 2 tablespoons of Earth balance butter
  • 1 teaspoon baobab powder
  • ¼ teaspoon ground nutmeg
  • ¼ cup maple syrup
Instructions
  1. To Make the Pudding:
  2. Mix together the chia seeds, coconut mil, and yogurt in a glass container with a lid. Store in the refrigerator for 3 to 5 hours or overnight. When done you should have a pudding-like consistency.
  3. To Make the Baobab Maple Syrup:
  4. Melt the butter in a small saucepan over medium-high heat. Add in the Baobab powder and nutmeg then stir. Add the maple syrup then stir.
  5. How to Serve Chia Pudding
  6. Pour equal amounts into four parfait glasses layering chia seed pudding with syrup. The syrup naturally folds throughout. Enjoy with a smile

Other toppings include but not limited to:
fresh fruit
granola mix
dark chocolate & nuts

Storage:
Store in the refrigerator. Consume within 48 hours.
