I hope you had a wonderful, productive week.  By the time you read this post, I’ll be at the vet with Dallas for his follow-up appointment.  If you’re clueless about Dallas and his follow-up appointment, read this.

I went overboard again. As a result, I purchased ( 2) 1-dozen packs of apricots at Costco, but lucky for you this week has two apricot recipes.

On Monday, I made this delicious apricot glazed salmon, and today these oh! so sweet and comforting scones. The apricots were screaming, “turn us into breakfast!” so I had to oblige them.

And on that note, I’m going to end the week with these golden delicious apricot scones with apricot honey glaze. I’m getting hungry just by saying it.

How To Prepare Apricot Scones with Honey Apricot Glaze

APRICOT SCONES WITH HONEY APRICOT GLAZE

Serves: 8 scones
Ingredients
  • 4 apricots sliced
  • 3¼ cups flour
  • ½ cup + 1 tablespoon turbinado sugar
  • 3 tablespoons brown sugar
  • 1 tablespoon melted Ghee butter or olive oil
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ¾ cup cold butter cubed
  • 2 teaspoons vanilla extract
  • ¼ cup + 1 tablespoon heavy whipping cream
  • ⅓ cup almond milk
Instructions
  1. Turn on the oven to 375 degrees
  2. line a baking sheet with parchment paper.
  3. Coat your apricots in brown sugar and ghee butter. Gah!
  4. Bake apricots for 10 minutes then set aside.
  5. FIRST
  6. Break out a large bowl then combine flour, ½ cup of turbinado sugar, baking powder, and salt.
  7. SECOND
  8. Pull out your pastry cutter or you can use a fork if you don't have a pastry cutter on hand. Cut in butter until the mixture takes on a crumbly texture.
  9. THIRD
  10. Mix in ¼ cup heavy whipping cream, stir in almond milk and vanilla. Mix until all dry ingredients are moisturized. Lastly, stir in those golden, sweet apricots.
  11. FOURTH
  12. Lightly sprinkle flour on the surface pat out dough and form in a 10-inch circle. Check out my circle, yeah... like that. Cut into 8 wedges.
  13. Lastly, place scones on a prepared pan lined with parchment paper, then brush them scones with 1 tablespoon of heavy whipping cream, then sprinkle with 1 tablespoon of turbinado sugar.
  14. Now the fun part, bake for 15-20 minutes until scones are golden or until the toothpick has little to no crumbs.
Notes
HONEY APRICOT GLAZE
2 apricots
1/3 cup honey
1/2 cup powder sugar

Blend ingredients in the food processor until desired consistency is reached.
