This pecan treat is a crackle-bark fusion that came together by accident.  Well, what had happened was…I was going for a candied pecan confection situation, but then the urge emerged to coat them with a thick, syrupy, gooey decadent mixture that will stimulate all the senses because … Tis the season!

With that said, raises the question were the pecan delights a success? With a resounding YES!!! Absolutely!!! The pecans toasted to perfection with a few blackened nuts, no cause for alarm. The syrup mixture was lightly caramelized but strong enough to solidify the pecans in place.  The orange zest added the perfect backdrop showcasing a pop of color with a citrusy tangy flavor checking the box for flavor variations.

Although there is room for improvement, I’m just being honest I happily challenge you to cook the syrup until the sugar turns amber in color to remind you just how sweet fall is.

How To Prepare Orange Toasted Pecan Topping

Serves: 2 cups
Ingredients
  • 1 cup toasted pecan halves
  • 1 cup organic cane sugar
  • ¼ cup spring water
  • 3 tablespoons of orange zest
Instructions
  1. Line a baking sheet with parchment paper or aluminum. Set aside.
  2. Toast pecans over medium heat for 5-10 minutes until toasted. Stir occasionally. Be careful not to burn. I burnt a few. LOL.
  3. In a small saucepan, bring sugar, ¼ cup water, and orange zest to a boil over medium-high heat. Cook for 20 minutes until sugar turns amber in color. Note I undercooked mine which explains why the color is different. Do you.
  4. Pour hot sugar mixture over pecans. Allow cooling completely for approximately 20 minutes. Transfer hardened mixture to a cutting board, chop into small bite sizes. Can be stored in an airtight container for up to 1 week. Enjoy!!
