Ingredients
  • 1 Tablespoon grapeseed oil
  • 1 cup of yellow onions chopped
  • 6 garlic cloves minced
  • 2 teaspoons curry powder
  • 1 teaspoon ground cumin
  • 1 32 oz. carton of reduced sodium vegetable broth
  • 4 medium green bananas peeled and sliced can be substituted with potatoes
  • 1½ cups dried yellow lentils rinsed and drained
  • 1½ teaspoons of pink salt
  • ⅛ teaspoon of black pepper
  • 1 can of organic unsweetened coconut milk
  • 2 cups of freshly chopped bok choy
  • 2 Tablespoons of fresh cilanto chopped
Instructions
  1. In a Dutch oven or large pot heat oil over medium-high heat. Add in onions and garlic. Cook until onions are translucent, and garlic is tender for approximately 3-4 minutes.
  2. Stir in curry and cumin powder. Cook for 1 minute until spices are fragrant. Add in the next five ingredients (through black pepper) Bring to boil, reduce heat, simmer covered for 45 minutes until green bananas and lentils are tender. Do not overcook.
  3. Stir in the coconut milk and bok choy, heat through. Add cilantro, and this soup is ready to be served.
