Pumpkin Fonio with Spiced Pecans

Ingredients
  • Fonio
  • 1 Cup of Fonio
  • 1 Can of Organic Pumpkin
  • 6 Cups of Spring Water
  • ½ cup of Maple Syrup
  • ½ Teaspoon Pumpkin Spice
  • Spiced Pecans
  • ½ Cup of Vegan Butter
  • 1½ Cup of Pecan Halves
  • 4 Tablespoons Coconut Sugar
  • 1 Teaspoon of Pumpkin Spice
Instructions
  1. Spiced Pecans
  2. Preheat oven to 350 degrees.
  3. Melt butter in saucepan.
  4. Add pecan halves to butter. Allow pecans to rest for 5 minutes.
  5. Add Coconut sugar and pumpkin spice to the mixture. Mix well.
  6. Pour mixture on to foil-covered sheet. Bake for 15 minutes.
  7. Remove from oven allow to cool. Set aside.
  8. Fonio
  9. Bring 6 cups of water to a boil.
  10. Add Fonio, reduce to a simmer stir in pumpkin, maple syrup, and pumpkin spice, stir for 7 minutes.
  11. Pour into bowl, sprinkle with spiced pecans. Add maple syrup to taste if necessary.

  15. Fresh Raw fruit
  16. Granola
