Pumpkin Chickpea Mushroom Stew

- Ingredients
- 3 Cups of fresh raw pumpkins
- 2 Cups of Oyster Mushrooms
- 2 Cups of dried Chickpeas
- 3 Cups of sliced Portobella mushrooms
- 2 Cups of Vegetalee broth
- 1 Can of vegan cream of mushroom soup
- 1 Cup of unsweetened coconut yogurt (feel free to substitute with canned coconut milk)
- 4-6 Fresh garlic cloves minced
- Pink Sea Salt & Pepper to taste
- Crushed Red Pepper to taste (Optional)
- Garnish
- Toasted Pumpkin Seeds
- Fresh Cilantro Flakes
- Crushed Red Pepper
- Vegenaise (Sour Cream can be used as a substitute for non-vegans)
- Combine all ingredients into the slow cooker.
- Cook on low for 6-8 hours or on high for 3-6 hours.
