  • 3 Cups of fresh raw pumpkins
  • 2 Cups of Oyster Mushrooms
  • 2 Cups of dried Chickpeas
  • 3 Cups of sliced Portobella mushrooms
  • 2 Cups of Vegetalee broth
  • 1 Can of vegan cream of mushroom soup
  • 1 Cup of unsweetened coconut yogurt (feel free to substitute with canned coconut milk)
  • 4-6 Fresh garlic cloves minced
  • Pink Sea Salt & Pepper to taste
  • Crushed Red Pepper to taste (Optional)
  • Garnish
  • Toasted Pumpkin Seeds
  • Fresh Cilantro Flakes
  • Crushed Red Pepper
  • Vegenaise (Sour Cream can be used as a substitute for non-vegans)
Instructions
  1. Combine all ingredients into the slow cooker.
  2. Cook on low for 6-8 hours or on high for 3-6 hours.
