DELICIOUS CHERRY JAM

Serves: 1½ cup
- 2 cups of fresh cherries rinsed, pitted and sliced into halves
- ½ cup of coconut sugar
- 2 tablespoons of lime juice
- ½ cup of coconut water
- In a medium sized pot over medium heat, boil cherries in coconut water and lime juice for 5-10 minutes.
- Stir in coconut sugar.
- Cook for 15-20 minutes until the jam takes on a honey-like consistency, stirring occasionally.
- Once done, remove from heat and allow time to cool. Transfer jam to a mason jar.
