PERFECT VEGAN CHOCOLATE CHIP COOKIES

Ingredients
  • ¾ cup Coconut Palm Sugar by Wholesome
  • ½ cup coconut oil melted
  • 1 teaspooon vanilla extract
  • ¼ cup almond milk
  • 2 cups organic flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • pinch of salt
  • ½ cup Mega chunks by Enjoy life
  • ½ cup of pecans or walnuts
Instructions
  1. Preheat oven to 350 degrees.
  2. In a medium bowl mix sugar, and coconut oil together. Then add in vanilla extract and almond milk. Mix ingredients.
  3. Add flour, baking soda, and baking powder into a sifter. Then sift in dry ingredients into the cookie mixture. Mix.
  4. Stir in chocolate chunks and pecans.
  5. Use a tablespoon to form dough balls or do what I did and shape by hand. Add to a non-stick cookie sheet.
  6. Bake for 8 minutes until golden brown.
  7. Enjoy!
Notes
I sprinkled a pinch of pink sea salt over the cookie dough for a sweet, salty combination.
