CRANBERRIES, BRUSSELS SPROUTS AND FRESH HERBS SALAD WITH PARMESAN

Ingredients
  • 2 Tablespoons of Olive oil
  • 2 pounds Brussels sprouts, washed, trimmed, and halved
  • ⅓ cup of chopped walnuts
  • 1 sprig of rosemary
  • 2 springs of thyme
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper
  • 1 small garlic clove thinly sliced
  • ¼ teaspoon onion powder
  • ⅓ cup dried cranberries
  • Thinly shaved Parmesan cheese
Instructions
  1. Preheat oven to 425 degrees
  2. Lightly drizzle pan with olive oil
  3. Season Brussel sprouts with salt, pepper, garlic clove, and onion powder
  4. Spread pan with seasoned brussel sprout halves, careful not to overlap.
  5. Bake for 15-20 minutes until lightly browned and Brussel sprouts are tender.
  6. Transfer sprouts to a serving dish.
  7. Sprinkle on rosemary, parsley, dried cranberries, walnuts.
  8. Toss to combine, then top with thinly shaved parmesan cheese,
Notes
I added approximately 1-2 Tablespoons of lemon juice for the zing factor!
