Serves: 2 dozen cookies
- 2¾ cups of all-purpose flour
- 2 teaspoons of baking powder
- 1 teaspoon of salt
- ½ cup of butter
- ½ cup of vegetable shortening
- ½ cup of sugar
- 1 cup of brown sugar
- 2 teaspoons of vanilla
- 2 eggs
- 2 cups of Hershey's chocolate chips
- ½ cup of pumpkin puree (Optional) (It's fall I had some left over pumpkin puree so I threw in ½ cup for good measure)
- Preheat oven to 375 F
- Combine flour and baking powder in a mixing bowl. Mix then set aside.
- Melt butter and shortening together. Then mix sugars, salt, and vanilla in a large bowl; then pour melted butter over the mixture.
- Mix well then add in eggs beat until creamy, then stir in pumpkin puree.
- Add flour mixture while beating. Lastly, stir in chocolate chips
- Refrigerate covered for 30 minutes to an hour.
- Lightly grease cookie sheet. Drop LARGE (Go BIG people!) rounded tablespoonful onto the sheet and bake for 9 to 11 minutes or until lightly browned.
- Remove and place on wire racks to cool if you can wait that long.
- Then unleash your inner cookie monster, just let'em go!!! :)
