SWEET CARAMELIZED PEARS

Ingredients
  • 3 ripe pears, peeled and halved (I used Bosc)
  • 6 teaspoons of brown sugar (1 teaspoon per half)
  • 1 tablespoon of sliced almonds
  • 6 teaspoons of pomegranate arils
  • 1 cup of vanilla yogurt
  • 1 teaspoon vanilla extract
  • ¼ teaspoon cinnamon
Instructions
  1. Preheat oven to 375 degrees.
  2. Place pears on a cookie sheet lined with parchment paper. Sprinkle with brown sugar.
  3. Bake for 20-25 minutes until pears are browned and softened.
  4. In a medium bowl combine vanilla yogurt, vanilla extract, and cinnamon. Mix until well combined.
  5. When pears are done sprinkle with almonds and broil for 1 minute until brown.
  6. Serve warm, over a dollop of vanilla yogurt topping each pear with almonds and pomegranate arils.
