SWEET CARAMELIZED PEARS

Serves: 4-6
- 3 ripe pears, peeled and halved (I used Bosc)
- 6 teaspoons of brown sugar (1 teaspoon per half)
- 1 tablespoon of sliced almonds
- 6 teaspoons of pomegranate arils
- 1 cup of vanilla yogurt
- 1 teaspoon vanilla extract
- ¼ teaspoon cinnamon
- Preheat oven to 375 degrees.
- Place pears on a cookie sheet lined with parchment paper. Sprinkle with brown sugar.
- Bake for 20-25 minutes until pears are browned and softened.
- In a medium bowl combine vanilla yogurt, vanilla extract, and cinnamon. Mix until well combined.
- When pears are done sprinkle with almonds and broil for 1 minute until brown.
- Serve warm, over a dollop of vanilla yogurt topping each pear with almonds and pomegranate arils.
