SKILLET CHILI PEPPER CHICKEN

Ingredients
  • 6 chicken drumsticks with skin on
  • Fresh parsley leaves
  • 6 teaspoons of red chili pepper paste (I used Gourmet Garden)
  • 1 teaspoon of garlic powder
  • ¼ teaspoon of black pepper
  • salt and pepper to taste
  • 1½ tablespoon of oil
  • Lime
Instructions
  1. Preheat oven to 400 degrees
  2. In a large bowl season drumsticks generously with salt and pepper add in garlic powder and black pepper. Once seasoned, add in 6 teaspoons of red chili pepper paste. Rub chicken on both sides completely covering drumsticks.
  3. Heat oil over medium heat in a cast-iron skillet. Once hot, add in drumsticks sear until golden brown, turning halfway through for 2-3 minutes.
  4. Remove skillet from stove and place in preheated oven for 15-20 minutes until done.
  5. Once done, lightly squeeze with lime juice then garnish with fresh parsley.
Notes
Pairs well with oven-roasted veggies.
