BLUEBERRY BRIOCHE FRENCH TOAST

Ingredients
  • Brioche French Toast
  • 6 large eggs
  • 1½ cup almond milk
  • 1 teaspoon lime zest
  • 1 teaspoon vanilla extract
  • ½ tablespoon of raw honey
  • 1 loaf of sliced brioche
  • ⅔ cups sliced almonds
  • 1 cup of quick oats oatmeal
  • non-salted butter
  • Blueberry Topping
  • 2 cups fresh blueberries (frozen will do)
  • ¼ cup H2O (Water)
  • ¼ cup sugar
  • 2 teaspoons lime juice
  • ADULT VERSION ADD: 2 tablespoons of blueberry wine to adult batch (totally optional, but highly recommended if you can find blueberry wine at your local wine/spirits store)
  • Ricotta whip topping
  • ⅓ cup of part-skim ricotta cheese
  • 1 tablespoon of powdered sugar
Instructions
  1. Brioche French Toast
  2. Preheat oven to 250 degrees.
  3. In a large pan, combine eggs, almond milk, lime zest, vanilla, and honey whisk set aside.
  4. Combine sliced almonds and oatmeal in a pan mix together then set aside.
  5. Dip brioche slices in the egg mixture as many as the pan will allow, turning once to coat each side.
  6. Then dip slices in almond, oatmeal rub turning once to coat each side-Don't forget the edges.
  7. Heat 1 tablespoon of unsalted butter on medium heat griddle or in a skillet-add coated slices to the griddle, cook for 2-3 minutes on each side until nicely browned.
  8. Once done, place cooked slices on a pan then place them in the oven to keep warm.
  9. Fry the remaining slices.
  10. Serve hot with blueberry topping and a dollop of ricotta whip. Yum in the Tum!! :)
  11. Blueberry Topping
  12. Combine 1 cup of blueberries, water, sugar, and lime juice in a saucepan. (Add blueberry wine for the adult version)
  13. Allow to cook over medium heat for 5 minutes, then add the remaining blueberries cook for 8 minutes, stir frequently. Allow to cool for 1 minute serve warm.
  14. Ricotta whip topping
  15. Combine ricotta cheese and powdered sugar in a bowl, mix well serve over warm brioche french toast. Enjoy!!
Notes
FYI: I had a glass of blueberry wine as an aperitif before breakfast, just thought I'd share. Do the damn thang!!!
