2 Tablespoons mustard with turmeric or regular mustard
2 Scallions thinly sliced
FOR THE RUB:
Mix the paprika, salt, sugar, pepper, chile, and dry mustard in a small bowl.
Place sweet potatoes in a saucepan cover with cold water bring to boil until done 15 minutes. Drain potatoes put in a large bowl toss with 2 tablespoons of the rub. Set aside.
To make the dressing mix the mayonnaise, cilantro, mustard, and scallions in a large bowl. Toss and cover potatoes with dressing mix. Garnish with cilantro. Place in refrigerator until ready to enjoy.
