BEEF STROGANOFF WITH ZIMA TOMATOES

Ingredients
  • Olive oil cooking spray
  • 1 lb. of boneless beef stew meat
  • 1½ cups of bow tie pasta
  • ½ lb. portobello mushrooms, sliced
  • ⅓ cup chopped onion
  • 2 garlic cloves chopped
  • 2 teaspoons olive oil
  • 1 tablespoon Worcestershire
  • ¼ teaspoon salt
  • 2 tablespoons flour
  • 3 cups beef broth
  • ⅓ cup sour cream
  • ⅓ cup Zima tomatoes (more if desired)
  • Salt and pepper
  • Cilantro to garnish
Instructions
  1. Prepare your meat: In a medium, pot add meat, Add 2 cups of beef broth with ¼ teaspoon of salt, cover and bring to boil, reduce heat to low cook for 1 hour (adding broth) as desired- until meat is tender.
  2. Cook pasta according to package instructions. Drain & set aside.
  3. While pasta is cooking, spray a large skillet with olive oil cooking spray. Heat over medium heat until hot.
  4. Add beef and stir-fry for 3-5 minutes until the outside is browned. Remove from skillet.
  5. In the same skillet, add the olive oil and heat until hot. Add the onions, garlic, and mushrooms and cook until tender about 2-3 minutes.
  6. Stir in flour. Gradually add 1 cup beef broth, Worcestershire, stirring until blended. Bring to boil cook and stir for 2 minutes.
  7. Return beef to skillet, add sour cream, mix well. If stroganoff is too thick, add more beef broth to thin out.
  8. Add salt and pepper to taste then add in Zima tomatoes. Cook for 5-7 minutes.
  9. Serve beef mixture over pasta, sprinkle with pepper and garnish with cilantro.
