Creamy fonio and tiny tomato sauce usher in fall properly. Tiny tomatoes stewed in hot sizzling butter with onions mounted on a creamy puddle of fonio make this dish hearty & delicious!
In a large saucepan combine tomatoes, onions, butter, and pink salt. Cook over medium-high heat. Once the tomatoes begin to blister, and bubble reduce the heat to a simmer.
Cook for 45 minutes stirring occasionally throughout until the butte begins to separate from the tomatoes and the liquid has reduced some.
Once done, serve over cooked fonio, topped with fresh oregano. MMM, MMM GOOD!!
