What brings you to my neck of the blogosphere? Let me guess. Was it yesterday’s Facebook post? Or your greedy curiosity got the best of ya? Both. I knew it!  Well alrighty then, how about this glowing cheesy goodness on your screen right now and the drool on your shirt right OVERrrrrrr here ->

This, my friends, is one of my favorite lasagna recipes, and the key is this peppery amber flushed mixture of peppers, onion, and garlic. I use this concoction in most of my savory dishes. Changed. My. Life.

And if you haven’t guessed by now, yes, I like it hot! But if the pepper isn’t your cup of tea then by all means tone down the habanero to 1/4 a slice, but don’t forego it.  As a friend I must advise -it would be wise to at least try a tiny, tiny slice- I promise it won’t send you to the ER. Just my opinion.

This oven luvin is loaded with scrumptious fresh veggies, sweet corn kernels that burst in your mouth with every bite, the intense flavor of the cremini mushrooms HELLO! And the tasty spinach that packs a Popeye punch. Let me not forget the saucy Italian sauce drowned with herbs and spices dusted throughout.  I usually make my own sauce, but this weekend was hectic with boxing up the kitchen. Oh, the kitchen!!

Now about my Facebook post that read, ” It’s Official! We’re…” what does that mean inquiring minds want to know. It means  IT’S A KITCHEN REMODEL!!! Yes! we’re remodeling our kitchen.  ***dancing- getting my groove on***

I’m so excited, the husband I have been planning this remodel over the last year and decided that now’s the time just to do it.  So. What does that mean exactly, well my kitchen will be under construction for several weeks, and I have the job of figuring how to feed a family of 6 throughout the construction process. Lucky me! I’ve been researching crockpot recipes like crazy so in the coming weeks a slew of crockpot recipes will descend on this blog don’t say I didn’t warn you. I should have before pics up next week so you can see my current situation.  Before I go, if you have any crockpot recipes I should consider, please comment below.

How To Prepare Turkey Lasagna with Fresh Veggies

WEEKNIGHT TURKEY LASAGNA WITH FRESH VEGGIES

Serves: Makes 8 servings
Ingredients
  • 1lb. ground turkey
  • 2 ears of fresh corn
  • 1 small onion
  • ½ green pepper
  • ½ red pepper
  • 4 garlic cloves
  • 4 sprigs of fresh thyme
  • ½ habanero pepper
  • 4 handfuls of fresh spinach (Go, Rogue if feel the urge)
  • 5 cremini mushrooms sliced
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • 1 teaspoon dried basil leaves
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon black pepper
  • 1 8 oz. jar of your favorite Italian sauce
  • ½ cup grated asiago cheese
  • 2½ cups shredded fontina cheese
  • 9 dried lasagna noodles
  • nonstick cooking spray
Instructions
  1. Preheat oven to 350 F.
  2. Cook lasagna noodles according to package directions. Set aside.
  3. Slice cremini mushrooms and set them aside.
  4. Wash spinach and set aside.
  5. Slice corn from the cob and set aside.
  6. In a food processor combine onion, green pepper, red pepper, garlic, thyme, and habanero pepper. Set aside.
  7. In a large skillet, season ground turkey with salt, black pepper, onion powder, cayenne pepper, and basil leaves. Cook over medium-high heat until turkey is browned break up meat as it cooks. Drain off fat.
  8. Add corn, cremini mushrooms, spinach, and pepper mixture. Stir in tomato sauce-cook for 5 minutes.
  9. Lightly coat a 3-quart rectangular baking dish with cooking spray. Place three of the noodles in the bottom of the dish.
  10. Spread one-third of turkey and veggie mixture, sprinkle one-third of mozzarella cheese and asiago cheese. Repeat layers twice. Top with remaining cheese.
  11. Bake, covered about 40 minutes until heated through. Bake uncovered for 10 minutes until cheese is browned and bubbling. Let stand for 10 minutes before serving. Garnish with thyme and serve. Enjoy! :))
