My month-long much-needed hiatus has come to an end, my friends. I missed you guys!!

My mind, body, and soul required my immediate attention, so I had to oblige by; spending a week-long vacation nestled in the cottages of King’s Creek. I indulged in weeks of self-pampering that included; zenful daily meditation (which I’m loving), journaling, eating fresh fruits and vegetables, juicing fresh juice by the gallon, and catching up on life in its present form.  Did I mention self-pampering?   

Hmm… anything else? Yes, as a matter of fact.  

Since I’ve been on this unapologetically love thyself tour, I’ve been baking batch, after batch of these vegan chocolate chip cookies. 

Be warned, these aren’t your average chocolate chip cookies.  Your home will be filled with sweet, intense scents of caramelized coconut palm sugar melting in harmony with intoxicating notes of melting chocolate chips that are pure, gooey pockets of blissfulness.

Let me say this, since becoming vegan in December, I’ve been on a mission desperately searching for the perfect {VEGAN} baking ingredients to support my confectionery addiction.

Here are two that I love!

How To Prepare Vegan Chocolate Chip Cookies

PERFECT VEGAN CHOCOLATE CHIP COOKIES

Serves: 8-12 cookies
Ingredients
  • ¾ cup Coconut Palm Sugar by Wholesome
  • ½ cup coconut oil melted
  • 1 teaspooon vanilla extract
  • ¼ cup almond milk
  • 2 cups organic flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • pinch of salt
  • ½ cup Mega chunks by Enjoy life
  • ½ cup of pecans or walnuts
Instructions
  1. Preheat oven to 350 degrees.
  2. In a medium bowl mix sugar, and coconut oil together. Then add in vanilla extract and almond milk. Mix ingredients.
  3. Add flour, baking soda, and baking powder into a sifter. Then sift in dry ingredients into the cookie mixture. Mix.
  4. Stir in chocolate chunks and pecans.
  5. Use a tablespoon to form dough balls or do what I did and shape by hand. Add to a non-stick cookie sheet.
  6. Bake for 8 minutes until golden brown.
  7. Enjoy!
Notes
I sprinkled a pinch of pink sea salt over the cookie dough for a sweet, salty combination.

    These sure do look good. I made vegan chocolate chip cookies a while ago they were actually very good but they seem to get hard fast. Your’s look delicious! May have to try them out one day so I’m going to pin it. By the way I’m an introvert too and I use to live in MD but now in the Northern Va area. 🙂

    So I have some Coconut Sugar and I can’t remember what I used it for but I did not likey. I am definitely going to try your recipe because I am sure they are going to be great! Wait, it was Coconut Flour I think not sugar.

    I love everything coconut. But when I use coconut oil, the one in the jar solidified, for cookies the coconut oil seems to have a greasy texture. Suggestions on reducing that affect? I’m not vegan I’m vegetarian though so I have split the oil part wth 1/4 coconut oil and 1/4 butter and they turned out great. But what might I have done wrong to contribute to a greasy texture when using all the coconut oil?

      Hi Marilea, that’s a good question, I’m not sure why the coconut oil would have contributed to a greasy texture. Having not seen the recipe, I would be speculating. One of the characteristics of coconut oil, it will solidify when stored below 76 degrees. I always melt my coconut oil first before measuring. I hope this helps.

      No, they’re not gluten free cookies due to the flour I used, but they can easily be made gluten free with a gluten free flour. Thanks for stopping by Sarah!
