What’s BIG, THICK, SOFT, and CHEWY with chocolate chips all over?

You guessed it! Let’s bake some CHOCOLATE CHIP COOKIES !!!

For the past week, I’ve yearned for homemade chocolate chip cookies. Like, can’t sleep yearning.  The craving was so intense, the taste of chocolate chip cookies was palpable, I could’ve eaten a stick of butter dipped in brown sugar, they were that strong.  Geez! Who woke up my inner cookie monster ?!

My first course of action was to check the pantry and to my dismay, the flour jar was empty, and we were out of chocolate chips. [What?! Who does the grocery shopping in this house?! ] Tonya, don’t answer that question.

So I did what any obsessed chocolate chip cookie lover would do, I made a mad dash to the grocery store; purchased three bags of flour along with six bags of chocolate chips. (You should assume each person in your household will devour absurd amounts of these chocolate chip cookies. So plan accordingly, my friends!)

In a matter of 15 minutes, a batch of chocolate chip cookie dough was in the hizouse!!!

I spooned eight large (Go BIG) rounded tablespoonful of cookie dough onto the cookie sheet, and I stalkerish-ly watched them bake.

The atmosphere filled with sweet, intense scents of caramelized sugar melting in butter in harmony with intoxicating notes of melting chocolate chips.

Batch after batch, I watched the cookie dough spread as it set into rounded shapes and baked into BIG, SOFT, CHEWY chocolate chip cookies.

Aaaaaaaaaaahhhhhhhh the joy of baking!!!!!!!

Side note: My intention was to bake good ol’ fashion chocolate chip cookies without any fancy-schmancy buzzword ingredients, or special techniques. Some days require we just keep it simple. However, I did add 1/2 cup of pumpkin puree for good measure totally optional. I know, I know I was bitten by the pumpkin bug.

How To Prepare Good OL’ Chocolate Chip Cookies

GOOD OL' CHOCOLATE CHIP COOKIES

Serves: 2 dozen cookies
Ingredients
  • 2¾ cups of all-purpose flour
  • 2 teaspoons of baking powder
  • 1 teaspoon of salt
  • ½ cup of butter
  • ½ cup of vegetable shortening
  • ½ cup of sugar
  • 1 cup of brown sugar
  • 2 teaspoons of vanilla
  • 2 eggs
  • 2 cups of Hershey's chocolate chips
  • ½ cup of pumpkin puree (Optional) (It's fall I had some left over pumpkin puree so I threw in ½ cup for good measure)
Instructions
  1. Preheat oven to 375 F
  2. Combine flour and baking powder in a mixing bowl. Mix then set aside.
  3. Melt butter and shortening together. Then mix sugars, salt, and vanilla in a large bowl; then pour melted butter over the mixture.
  4. Mix well then add in eggs beat until creamy, then stir in pumpkin puree.
  5. Add flour mixture while beating. Lastly, stir in chocolate chips
  6. Refrigerate covered for 30 minutes to an hour.
  7. Lightly grease cookie sheet. Drop LARGE (Go BIG people!) rounded tablespoonful onto the sheet and bake for 9 to 11 minutes or until lightly browned.
  8. Remove and place on wire racks to cool if you can wait that long.
  9. Then unleash your inner cookie monster, just let'em go!!! 🙂
