Brrrrrr!! Winter why you gotta be so cold?!

On Saturday, we had another wintery mix.  By nightfall, we were blanketed with 3-6 inches of frosty powdery snow.  Is it me or has this winter been unusually blistering cold? You too! I say we brace ourselves with a pot of cheesy hot chili.WINTER SNOWY DAY

When temperatures reach finger-numbing degrees, there’s no better way to warm up the body with a natural, delicious pot of rich hot chocolate to satisfy the soul.

DARK HOT CHOCOLATE

I do realize semi-sweet dark chocolate is an acquired taste for some my husband and children aren’t particularly keen on the lack of sugar content dark chocolate delivers, but they sipped the happy medium to a much bolder, bitter chocolate. I, on the other hand, love dark chocolate with its burnt sienna color and bitter cocoa notes.

So, to satisfy all because that’s what I do on occasion( to keep the peace), I  whipped up a bowl of sweet, cooling mascarpone whipped cream. Can I just say, I’m in love, I’m in love, and I don’t care who knows it !!  Mascarpone cheese!   Ahh! This is my new go-to cheese.  I spread this stuff on toast, fruit, my fingers I love it! Ok, I digress.

So yeah, whizz up a batch of hot chocolate, we’re living in cold times, my friends. 🙂

WHIPPED CREAM
How To Prepare Dark Hot Chocolate with Mascarpone Whipped Cream

DARK HOT CHOCOLATE WITH MASCARPONE WHIPPED CREAM

  • 3 ounces of semisweet dark chocolate
  • 2 tablespoons of sugar
  • ½ teaspoon of cinnamon
  • ¼ teaspoon of whole nutmeg zest
  • ½ teaspoon of vanilla
  • 3 drops of almond extract
  • 4 cups of milk
  • 1 cup of heavy whipping cream
  • 1 teaspoon of mascarpone cheese
Instructions
  1. In the food processor combine 3 ounces of broken semisweet chocolate, 1 tablespoon of sugar, ¼ teaspoon of nutmeg zest, and ½ teaspoon of cinnamon -ground until it reaches a fine texture.
  2. In a saucepan combine chocolate mixture and 4 cups of milk. Cook and stir over low heat for 15-20 minutes or until chocolate melts.
  3. Remove pot from heat- stir in ½ teaspoon vanilla and 3 drops of almond extract.
  4. Add Mascarpone whipped cream, sprinkled with cinnamon-serve warm.
Notes
Mascarpone cheese whipped cream:

Place the metal bowl with the whisk in the freezer for 15 minutes.
Place 1 tablespoon of sugar, 1 teaspoon of mascarpone cheese, and 1 cup of whipping cream in the bowl. Whisk until the mixture has a stiff-like texture.
